About This Blog

So it's got to that point... that point when your adventures in the kitchen are getting so ridiculous that your friends say, 'I know... you should start a blog!'

Well here it is. A collection of my favourite recipes, my own recipes and the beats that turns cooking at home into such a delight.

Recipe no1: Cauliflower and 'Fontina' Gratin - Polpo

This recipe is so good it's converting people that claim they don't like cauliflower cheese. It's a simple but effective recipe purely down to the choice and sheer amounts of cheese. To be honest I've never done it properly as the first time I made it I couldn't find any fontina. I picked up some vintage gouda as a replacement and I certainly made the right choice, I believe so much so that I've never tried it with fontina. Perhaps I should at some point... It's always exciting to try and make things even tastier and my best discovery yet for this recipe was in wild garlic season. Dehydrate chopped wild garlic + chilli flakes with brown bread crumbs and cover the top for delicious crispiness.

I would genuinely love to say this recipe was mine - well, try some edits and it kinda is...

Recipe no2: 'Spice is Nice' Banana Bread - Kitchen & Co.

It's all about the spice in this banana bread, have a bite and think for a minute about what it is... Ah, it's the cardamom. The first recipe that has ever asked me to open the cardamom pods and drop the seeds in. Genius. This recipe has had nothing but good reports, especially from my fellow acro monkeys.

I also tried this warm with some vanilla ice-cream... (shhh... don't tell anyone... it was gooood).

Recipe no3: Green Chilli Slaw - Pitt Cue Co.

Oh em gee!! I have used this recipe for so many things!! The flavours are fantastic and the dressing recipe gives you so much more than you need for the slaw! I freeze the remainder in small portions as it's pretty strong... (lets just say a teaspoon on it's would be relatively unenjoyable and require a large glass of water to follow...) then add small doses to soups, sauces, stews and my latest... mashed potato that I had with a piece of salmon! Enjoy!
